Why caviar is so expensive

One of the most expensive foods in the world, caviar, can sell for up to $35,000 per kilogram. But it didn’t used to be so expensive. In fact, caviar used to be available for free in some places. Like champagne, however, not just any fish eggs can be called “caviar,” and the fish that do produce them might soon disappear.
