Stopping a laser beam in mid-air

Sci-fi movies always make laser beams look like they move at about the speed of a bullet, when in fact they move much much faster. Laser beams move at the speed of light, so we perceive lasers as moving instantaneously. But if they’re that fast, how can a man stop a laser beam midair?
