How lobster shells could replace single-use plastic

Crustaceans are strange. They’re basically giant bugs that live underwater, but somehow, we aren’t repulsed by them like we are by roaches and spiders. Unlike bugs, crustaceans have much tougher armor called ‘chitin’ that they use to keep seawater on the outside. This armor, however, has unique strengths and properties that have captured the imagination of scientists. You won’t believe the new uses they’re finding for lobster shells.
