Empty nester learns to cook for two

As the Client Service Manager here at The Kim Komando Show, part of my job is to know everything there is to know about our clients and the products or services they offer.  I love experiencing new things, so I have a pretty exciting job.

My husband and I recently became empty nesters, and we’re faced with having to figure out how we want dinnertime to be with just the two of us.

After 20-plus years making dinner for our family of four, we suddenly didn’t know how to approach dinner. When the kids were little, one of us would cook while the other did the dishes. But now with the kids out of the house, we wanted dinner to be something we could do together. So we decided to give HelloFresh a try.

Hello Fresh meets meal needs

I went to HelloFresh.com/Kim and selected the Classic Plan. They offer three different plans for you to choose from - The Classic Plan, The Veggie Plan or the Family Plan. With the Classic Plan, you can choose whether you want to feed two people or four and get two, three or four recipes each week.

I chose the three meals a week for two people. Once I put in my information at checkout, I got to choose three meals to be sent to me. I decided to be bold and chose three dishes that I thought could be delicious but fun to make; the Ground Beef Bulgogi Bowl, Balsamic Fig Chicken and the Pineapple Poblano Beef Tacos. Full disclosure - my mouth was watering the whole time.

I was pleasantly surprised when my HelloFresh box arrived just a few days later. All the ingredients were fresh and easy to identify. Each dish comes with most of the ingredients and a full color, large recipe card that breaks down each step for you.  We decided to cook the Balsamic Fig Chicken.

Tasty choice for dinner

This dish is served with sweet potatoes you chop up and season with salt and pepper and throw in the oven for about 25 to 30 minutes, depending on your oven. Mine took about 30 minutes to get the crispness that I was wanting.

It comes with mixed greens. A drizzle of olive oil, juice from a half of a lemon and a bit of salt and then toss it.

Can I just tell you that, when it comes to dressings, I am a Ranch-o-holic. But this dressing made me say "Ranch who?" I would have never tried this dressing on my own because I would have just thought it wasn't worth trying. I'm so glad I did because it was delicious and fewer calories than Ranch, and now my new favorite.

The chicken was super easy to cook - just seven minutes on each side in a pan, or until they are no longer pink inside, on medium-high heat. Remove them from the pan and set them on a platter to rest.

While my husband was cooking the chicken, I had another pan cooking the fig sauce. This smelled so delicious!! The combination of rosemary, vinegar, fig jam and shallots made my home smell divine! Once the sauce was done, we were ready to serve up the food!

All in all, it took about 30 minutes and we had minimal cleanup. And when it was finally time to eat, I was so impressed with how the dish came out because I would have never thought to cook this dish, Now that I know how, I am going to make sure it's a regular on our menu.

One of the things I love best about HelloFresh is that I eat food I normally wouldn't. We had so much fun working as a team that it didn’t feel like a chore, and that was a first for me. I’ve never been a Betty Crocker type, but I found cooking with HelloFresh and my husband was a blast!

The instructions are simple and easy to follow, and only about six steps in all. I’ve already gotten my newest HelloFresh box and I can’t wait to see what we’re having for dinner this week. I love cooking with HelloFresh!
