Finally, it's barbecue season! For much of the U.S. who weathered some fierce snowstorms, this season couldn't come fast enough!  Now we're dusting off our sun umbrellas, inflating the pool floats, and filling our calendars with weekend barbecues with family and friends.

It's supposed to be a stress-free time to relax and have fun. But whether you're planning a barbecue, or are a guest of one, what to cook and bring can sometimes be a little overwhelming.

That's why at the beginning of the season, I like to pick my signature dish. One that I will make to take to any barbecue. It saves me from scrambling at the last minute, hoping I have the ingredients I need, all while trying to figure out what everyone will like.

My friends and family are eclectic. That's what I love about them. But trying to satisfy all of their taste buds can be a chore. One doesn't eat meat (neither do I), another is allergic to seafood, someone else doesn't do eggs. But I have found a solution. It's a dish everyone raves about, it's super easy to make, and I'm going to share it with you so you can enjoy it too!

Cornbread salad

This "salad" is so refreshing. Not your typical lettuce and tomatoes. It's light and filling and has ingredients that everyone loves. OK, here's what you need:

Combine the tomatoes, bell pepper, cilantro and 1/2 teaspoon of salt in a medium bowl. In a separate bowl, whisk the sour cream, mayonnaise, scallions, lime juice, chili powder and 1/2 teaspoon salt.

I like to use a trifle dish to put it all in because it makes the presentation so much prettier. Sprinkle half of the cornbread in your serving bowl. Top it with half each of the black-eyed peas, then half of the corn and the tomato-pepper mixture. Pour half of the sour cream mixture and cheese over it and repeat your layers with the rest of your ingredients. Now just cover it with plastic wrap and refrigerate it for at least two hours or overnight.
