My friends and family are eclectic. That's what I love about them. But trying to satisfy all of their taste buds can be a chore. This "salad" is so refreshing. Not your typical lettuce and tomatoes. It's light and filling and has ingredients that everyone loves. OK, here's what you need:
Combine the tomatoes, bell pepper, cilantro and 1/2 teaspoon of salt in a medium bowl. In a separate bowl, whisk the sour cream, mayonnaise, scallions, lime juice, chili powder and 1/2 teaspoon salt.
I like to use a trifle dish to put it all in because it makes the presentation so much prettier. Sprinkle half of the cornbread in your serving bowl. Top it with half each of the black-eyed peas, then half of the corn and the tomato-pepper mixture. Pour half of the sour cream mixture and cheese over it and repeat your layers with the rest of your ingredients. Now just cover it with plastic wrap and refrigerate it for at least two hours or overnight.
